Tumpuluni 🌶️

Calabrian 'Nduja di Spilinga DOP
Pecorino Romano

Tumpuluni means something like “a punch” in the Calabrian dialect. Quite a bold name for a sauce. And I have to say, it fits!
It's the second sauce I developed. At first, I intended to make it available only in limited quantities. But the requests from those who wanted to enjoy it again convinced me to give it a permanent place in my range.
At its heart is ’Nduja from Spilinga, a village in Calabria, not far from the famous town of Tropea. A speciality made from pork and plenty of chilli, with a texture so soft that it can be spread on bread. If you've never tried ’Nduja before, that's probably the best way to imagine it.
When heated, it melts and blends with the other ingredients. In my Tumpuluni, it comes together with tomatoes and Pecorino Romano PDO.
It's a spicy sauce, there's no point pretending otherwise. But it's the balance I've found between these three ingredients that convinced me to put it into a jar. You can taste the chilli, but you can also taste everything else.
This is the sauce I'd choose when I'm in the mood for a plate of pasta with a bold, intense flavour. A jar to keep in the pantry, ready for exactly that moment.
